Worldwide obesity has more than doubled since 1980. Several population studies have found coffee consumption to be inversely associated with weight gain, and consequently, to also offer other health benefits. On the basis of this epidemiological data, further research found that the compound chlorogenic acid is the reason for this effect. In vitro and in vivo studies have shown that pure 5-caffeoylquinic acid - the most represented chlorogenic acid in coffee – inhibits glucose absorption from the intestine, as well as the enzyme glucose-6-phosphatase, which is involved in glucose release from the liver into the blood stream. By inhibiting these processes, blood sugar is lowered, triggering the breakdown of fatty tissue for energy and supporting weight management.
